Broiled Swordfish Steak

What’s so great about making fish is that it’s easy, it’s quick, it’s healthy, and it’s yummy!

For an asian-style broiled swordfish steak, crush some garlic, mince some ginger, and whisk together along with some tamari and extra-virgin olive oil and a little bit of apple cider vinegar for some acidity. Place the swordfish steaks in a bag, pour in the mixture, and marinade for about half an hour. Broil the steaks for at least 5 minutes on each side until the fish flakes easily.

Devils on Horseback

Bacon-wrapped dates, a.k.a. devils on horseback, is a simple but very delicious appetizer. Just take the dates, stuff it with blue cheese and almonds, and wrap them in bacon. Put the dates on a rack with a baking sheet underneath and bake at 350 degrees for at least 16 minutes on each side. I’d start watching the dates after 16 minutes to make sure you don’t overcook them and keep in the oven for a bit longer as needed just until the bacon is crisp.

I’ve made this several times already and found that this does indeed taste better using medjool dates and please do go crazy and include the almonds. They add a nice chunkiness to the dish. When it comes to the blue cheese, look for the soft and creamy variety.

I realize this isn’t exactly primal (high sugar content) but, hey, it’s okay to live it up every once in a while.

Mocha Ice Cream

I’m a sucker for ice cream but haven’t been able to indulge much since I turned primal. This is why I was ecstatic to get an ice cream-maker attachment for my KitchenAid mixer because it meant I’ll finally get to make my own! Of course, I had to make mocha flavor for my first ice cream-making endeavor (click here for the recipe).

When making homemade ice cream, it’s not easy to get the same consistency as store-bought ice cream and this recipe certainly didn’t provide me with that but the flavor was spot on! A few weeks after this, I ended up making vanilla ice cream that was nearly perfect both in flavor and consistency so be on the lookout for that.

Ingredients: brewed dark roast coffee, unsweetened cocoa powder, unflavored gelatin, unsweetened coconut milk, raw honey, stevia powder, sea salt, vanilla extract, and chocolate/coffee liqueur (optional)

Rosemary Braised Lamb Shank

Found some lamb shanks on sale and so I decided to make some braised lamb shanks (click here for the recipe). This dish is so great because it just keeps getting better the more you heat and reheat it.

Walnut Crackers

I love a good pate and a good cheese. I can eat them by themselves or with fruit but it’s just much better when there are crackers to go with them. Thank goodness for nut-based crackers!

Chicken Curry Wings

This is, by no means, a fancy dish. This is one of those I-just-got-home-at-8pm-I-need-to-make-something-to-eat-quick dishes. This will take you 30 minutes tops to make and doesn’t even require a recipe.

Just saute some garlic in olive oil until soft then add the chicken wings seasoned with sea salt and pepper. The wings will likely emit excess water so just wait until it evaporates to about a third of the original amount of liquid then add the curry paste. Any type of curry paste will do e.g., yellow, red. Just continue sauteing until the chicken wings are slightly browned, remove it from the pan, then serve it with a side salad or any veggies.

Chocolate Chip Cookies

Some people have to understand that when one goes primal, one doesn’t necessarily have to give up all indulgences. In the beginning, it’s just a matter of saying “no” to bad foods until you absolutely cannot say “no” anymore and that’s when you give in. But the longer you stay with it, I assure you that your palate will evolve as well. You’ll find yourself rejecting foods that you used to crave because they no longer taste as good and they make you feel worse!

Now I don’t know if this has happened to me and chocolate chip cookies because I can’t remember the last time I had flour-based ones. When I crave some, I just whip up a primal batch which to me are equally delicious (click here for the recipe) and quite easy to make.

Tip: I like my cookies soft so I just pop a tray in the oven for 7-8 minutes.
