Vinegar Gloss Chicken

I tuned in to “Mad Hungry” one time and watched Lucinda Scala Quinn make this dish. She made it sound and look so delicious that I just had to try it for myself (click here for the recipe).

The original proportion of red wine vinegar and chicken broth didn’t work for me; I thought it was too sour. Normally, I fix flavors as I go along but I neglected to do it for this one. The dish tasted fine but it could have been much better. Next time, I’ll make it with 1/2 - 3/4 cup of red wine vinegar and about a cup of chicken broth instead.

This dish reminds me of chicken adobo but without the soy sauce. Maybe I’ll make that next.
