Filipino Style Pork Belly
If I had to limit myself to one protein to consume for the rest of my life, hands down, I’d pick pork and it’s all because of two words — pork belly.
I wanted to grill pork belly because I was missing home and “inihaw na liempo” so much. But being that I live in an apartment, I don’t have the luxury of a real grill. A stove top grill just can’t compare to the real thing so I decided to broil it instead. I think it was good ol’ Alton Brown who said that broiling is just grilling done upside down.
I gotta tell ya, this dish brought back pleasant memories of my beloved PI.

Ingredients: pork belly, soy sauce, lemon/calamansi , ground black pepper, salt, garlic, banana catsup, olive oil
