Chicago Trout Substitute
When I was in Chicago a couple of months ago, I had the pleasure of dining at Marcus Samuelsson’s C-House restaurant. I had just gotten rained on and was starving so I was really looking forward to a great meal. That’s exactly what I got with my order of Rushing Waters Trout (nichols cauliflower, almonds, and tarragon). My favorite thing about it is they serve the whole fish (no fillet here) and it’s got delicious, crispy skin.
When I saw that my favorite grocery service had trout on sale, it reminded me of that delicious meal. But of course, I couldn’t have hoped to replicate that dish so I had to find a suitable alternative.
