Light-as-Air Chocolate Mousse
I was going through my older posts and I noticed that I don’t have that many “chocolate” entries which is strange because I’m a chocolate addict. I need to remedy this. Let’s start with this divine dark chocolate mousse (click here for the recipe).
Note to self: add a layer of chocolate covered pecans as the crust next time to add texture to this dish.

Ingredients: 70% cacao dark chocolate, unsalted butter, espresso, heavy cream, eggs, stevia (I originally wanted to use raw honey but I changed my mind. Too much liquid will change the mousse’s consistency)
