A Keeper
Have I already mentioned how much I love chocolate? I’m especially fond of flour-based chocolate cake (as opposed to flourless). I’m so happy that I found a recipe that’s a keeper!
Here is Elana’s Pantry’s coconut flour-based chocolate cake with vegan frosting (click here for the recipe). The only thing I would change is the frosting. Don’t get me wrong, it was delicious. But I live in an apartment in Manhattan (translation: small) so I don’t have the space for a stand mixer; I use a hand mixer. It took me a really long time to whip this into soft peaks and I had to take a break every now and then because my arms were getting tired. I think it’s because of the grapeseed oil. I’m not vegan so I’m okay with using dairy. I have a chocolate frosting recipe in mind I can use for next time. Take it from me, this cake was so yummy! I’m already looking forward to the next time I make it.

Ingredients: coconut flour, cacao powder, sea salt, baking soda, eggs, grapeseed oil, raw honey, vanilla extract, orange zest, slivered almonds (optional)
